A Soup-er Strategy

soup

Ladle up a bowl of sippable soup. A study in the European Journal of Clinical Nutrition shows that puréed soups are more filling than chunky ones. People who slurped smooth soup felt fuller afterward than those who ate the same ingredients made into a chunky soup. That’s because puréed soup allows for faster absorption of nutrients yet slows gastric emptying, the scientists say. Order smooth, low-calorie soup as an appetiser at restaurants, and purée soups for satisfying servings at home.
