Stealth Health Food: Tomatillo

Translation: “little tomato.” This fruit is native to Mexico and has a slightly acidic taste.

Why it’s healthy

One cup of chopped tomatillos has just 42 calories and is packed with vitamin C and vitamin K. Plus, tomatillos contain lutein and zeaxanthin—carotenoids that may boost eye health.

How to eat it

As a salsa: Roast a pound of husked tomatillos, one seeded jalapeño, and one halved onion in a 230°C oven for 20 minutes. Puree with the juice of one lime, then season. Eat with grilled chicken.
